Once you try this simple no-fry version of your favorite Indo-Chinese appetizer, there is no going back. It's an explosion of flavor and texture!
This recipe has been tried and tested several times. This dry manchurian is best served immediately as an appetizer. It spicy, garlicy, and tangy notes will definitely tingle your tastebuds.
I came up with this recipe when I kept seeing recipes for buffalo cauliflower wings. I wanted to coat it in a different sauce, and I came up with this idea instead. It has been a party and family favorite for some time now.
Air Fryer Gobi Manchurian
Ingredients
For the Batter:
1 head of Cauliflower cut into florets
1 cup All Purpose Flour
1/4 cup Cornstarch
1/2-3/4 cup water
1-2 tbsp oil
Pinch of Salt
For the Manchurian Sauce:
1 tbsp oil
3-4 Garlic cloves
2-3 Spring Onion whites (reserve greens for garnish)
1 in. Ginger grated
1-2 Green chilies
2 tbsp Soy Sauce
2 tbsp Ketchup
1 tbsp Sambal
1 tbsp water
1/2 tsp cornstarch and 1 tbsp water for slurry
Directions
For the Cauliflower
In large bowl, mix flour, cornstarch and salt. Reserve 1/4 cup of dry mixture.
Create batter by adding water and oil to create thick paste. Toss cauliflower florets in dry mixture then coat with batter.
Preheat air fryer for 5 mins at 400 degrees.
Place coated florets in air fryer basket. Bake at 400 degrees for 12 mins.
Then brush or spray with oil. Air fry for additional 10 mins at 400 degrees.
For the Manchurian Sauce:
For sauce in large deep pan, heat oil and add spring onion white, garlic ginger and chilies. Stir until fragrant.
Add sauces and let cook.
Create cornstarch slurry with water and add to pan. Cook for additional two minutes.
Add florets and garnish with spring onion greens. Serve hot and enjoy.
