This recipe combines two of my favorite cuisines with a twist. These air fryer flautas will have your tastebuds dancing, that too guilt-free!
I have made many types of flautas, but this filling remains a favorite. Goat cheese adds a smooth a salty finish to the tandoori covered beans and mushrooms. The tandoori flavor is an unexpected surprise in these flautas. These ingredients are generally in my home, so this is a quick last minute weeknight dinner. Check it out!
You can keep these flautas vegan and avoid adding the goat cheese.
Air Fryer Tandoori Black Bean Flautas
Ingredients
For the Filling:
1 in. Ginger grated
2-3 Garlic cloves grated
2 spring onions, chopped (separate whites and greens)
1/2 bell pepper
1 can black beans rinsed
1 package mushrooms sliced
1 tsp. Cumin (Jeera) powder
1 tbsp. Taco Seasoning
1 tbsp. Tandoori Masala
Cilantro for garnish
For the Flauta:
8-10 Corn tortillas
Oil
5-6 tbsp. Goat cheese
Directions
Filling Preparation:
In a pan on medium heat oil. Add jalapeño, ginger, garlic, spring onion whites. Sautee for 1-2 minutes.
Then add mushrooms and salt. Let them release water.
Thereafter add bell peppers. and let them cook slightly.
Add rinsed black beans.
Season with cumin powder, tandoori masala and taco seasoning. Check for salt and garnish with cilantro and spring onion greens. Let cool.
Flautas assembly:
In a damp napkin, microwave tortillas for 30 seconds.
Take one tortilla, oil on one side and flip.
Place filling on one side and top with goat cheese. Roll tightly and place seam down on your baking tray or air fryer basket. (You can also hold them close with toothpicks.
Air fry at 400 degrees for 8-10 minutes. Bake at 425 degrees for 20 minutes. Flip once halfway through. Enjoy with your favorite dipping sauce!
