We love Mexican food. We are always looking for ways to make quick weeknight meals fun and festive. I love this DIY fajita bar idea. Its super easy and requires very little preparation. You can make the filling ahead of time, and just serve with the bar fixings on another night.
Chipotle Portabella Mushroom Fajitas
Ingredients
Filling:
4 Portabella Mushrooms sliced
1 Zucchini sliced
1 Bell Pepper sliced
1 Onion (medium) sliced
1 in Ginger grated
3-4 Garlic cloves minced
1 tbsp. Taco seasoning
1 tsp. Cumin Powder
2 tbsp. Chipotle peppers in Adobo (I use Wegmans brand)
Pinch of salt
Fajita Bar Fixings:
Flour Tortillas
Salsa
Avocado or Guacamole
Sour Cream
Cilantro
Directions
In a heavy bottom pan or Cast iron skillet, heat oil.
Once the oil is warm, toss portabella mushrooms and half the seasonings (taco, cumin and salt). Cook thoroughly, until mushrooms release enough water.
Remove from pan and set aside.
In the same skillet on high heat, add oil if necessary. Heat ginger and garlic.
Add remaining veggies. Add remaining seasoning.
Cook til veggies release moisture.
Add chipotle sauce.
Mix thoroughly. Add portobellos and mix well.
Serve hot with other fajita bar fixings. Enjoy!
