Crispy Chickpea Fiesta Grain Bowl

This grain bowl is even better than the ones available at the salad spots. The balance between the crema and the chickpeas make this recipe a delight. The crispy chickpeas are a great snack and accompaniment to drinks!

A good salad has multiple components- crunch factor, protein, fat, and fresh ingredients. For a salad to be satisfying, it should contain a decent amount of protein and fat. If the salad doesn't have that, you are left hungry after an hour. This salad hits all these notes. The crunchy chickpeas, the avocado crema and the grains keep you satiated.


Crunchy Chickpea Fiesta Grain Bowl


Ingredients


Crispy Chickpeas

  • 15 oz. can Chickpeas or fresh Chickpeas

  • 1 Tbsp. Taco Seasoning

  • 1/4 Tsp. Salt

  • 1/4 Tsp. Red Chili Powder (optional)

Avocado Crema

  • 1/2 Avocado

  • 1 Lime, juiced

  • 1 Thai Green Chili

  • 1 Garlic clove

  • 1/4 Cup Cilantro

  • 1 Tbsp. Yogurt (If vegan can use coconut yogurt)

  • 3-4 Tbsp. Water

  • Salt to taste

Crispy Chickpeas:

  1. Pre heat your air fryer to 400F degrees for 5 minutes.

  2. In a bowl, add your chickpeas.

  3. Add oil and seasonings.

  4. Mix well.

  5. Place in air fryer basket. Air fry the chickpeas at 400 degrees for 10 minutes. Air fryers tend to vary, if they are still not crispy you can continue to air fry up to an additional 10 minutes.

  6. Check if they are crunchy and let cool.

Avocado Crema:

  1. In a blender add all the ingredients.

  2. Blend to a thick paste like consistency. Add water to thin the crema out if desired.

Bowl Assembly:

  1. Arrange your toppings and chickpeas.

  2. Dress your bowl with your avocado crema.

  3. Garnish with Cilantro and sliced avocado. Enjoy!
