Ferrero Rocher Cupcakes (Eggless)

These melt in your mouth cupcakes are a definitely worth the calories.

This is one of my signature recipes. I have made these several times for special occasions, and they are always a hit. They are so soft and spongey. The Nutella whipped cream is an excellent pairing with the rich delicious cake.


Ferrero Rocher Cupcakes (Eggless)


Ingredients

Cupcakes

  • 1 Cup of All Purpose Flour

  • 1/2 Cup of Cocoa Powder

  • 1 Cup of Granulated Sugar

  • 1/2 Tsp. of Baking Powder

  • 1/2 Tsp. of Baking Soda

  • 1/4 Tsp. Kosher Salt

  • 1/2 cup of Unsalted Butter (softened)

  • 1/2 Cup Yogurt

  • 1/4 Cup of Water

  • 1/4 Cup Coffee (Optional- you can just use 1/2 Cup Water instead)

  • 1/2 Tsp. of Vanilla Extract

  • 12 Ferrero Rochers (Place in the freezer overnight)

Whipped Cream Topping

  • 1- 1 1/2 Cup of Heavy Whipping Cream

  • 1 Tbsp. Powdered Sugar

  • 3 Tbsp. Nutella

  • Gold Icing Sugar (Optional)

  • 12 Ferrero Rochers

Directions

  1. Preheat the oven to 350 degrees and line the muffin tin with cupcake liners.

  2. In a bowl, whisk together butter and sugar. Once combined add yogurt and vanilla.

  3. Add the dry ingredients, water, and coffee. Mix the ingredients but do not over mix.

  4. Now begin to fill the muffin tins. Add some batter, then place a frozen Ferrero Rocher in the batter. Cover the chocolate with a little more batter.

  5. Bake for 15-20 minutes. Check on the cupcakes at the 15-minute mark and see if they are done. Depending on your oven, you might need to bake a little longer.

  6. Remove cupcakes and let them cool. If they crack while trying to remove from the muffin tin, place the tray in the refrigerator for 10 minutes.

  7. To make the whipped cream, place the heavy whipping cream in a bowl attached to a stand mixer (or use hand mixer). Add the powdered sugar and mix until soft peaks. Add the Nutella and continue to mix. Make sure to scrape down the bowl in between to ensure it is combined well.

  8. Use a knife, ice cream scoop, or piping bag to place the whipped cream on the cupcake.

  9. Sprinkle gold icing sugar for a nice touch. Top with a Ferrero Rocher. Enjoy!
