This recipe is inspired by one of our favorite Mediterranean restaurants in NYC. These sweet and savory Brussel sprouts are an explosion of flavor.
The sweet notes of fig jam with the cooling mint yogurt give this dish simple dish such a rich flavor! This dish took some time to recreate but was definitely worth it.
Fig Brussel Sprouts
Ingredients
1 Package of Brussel Sprouts, cut in halves
Salt and Pepper to Taste
7-8 Grapes cut in halves
8-10 Walnuts
5-6 Mint Leaves, cut into ribbons
3-4 tbsp Fig Jam
2-3 Garlic cloves
1-2 Thai Green Chilies
1/4 Cup Greek Yogurt
3-4 Tbsp oil
Salt & Pepper to taste
Directions
In a bowl, coat Brussel sprouts in oil. Add salt and pepper. Air fry for 12 mins at 350 degrees.
Meanwhile, prep the other ingredients. Toast walnuts in a pan on medium heat. Cut grapes, mint, garlic and chilies.
In a pan heat oil on medium heat. Add garlic and chilies.
Once fragrant, add fig jam and splash of water. Cook on medium heat.
Once thickened turn off heat. Add cooked Brussel sprouts and toasted walnuts. Add grapes as well.
In a separate bowl mix mint into yogurt.
Plate the sprouts. Top with mint yogurt. Enjoy!
