This easy to whip up (pun intended) Feta Dip is a great party appetizer. Serve this fluffy dip topped with fresh herbs and veggies with pita chips or warm pita bread.
This is an easy and party favorite. I love the use of fresh herbs and veggies in this dip. Even though it has cheese, it doesn't feel that heavy. The best part of this dip is that the leftovers go great in a sandwich or on top of a salad.
Greek Whipped Feta Dip
Ingredients
1 Clove Garlic, peeled
1-2 Green Chilies. diced
1 (15-ounce) Can Cannellini beans, drained
1/2 Cup Flat-Leaf Parsley, chopped
1/2 Cup Fresh Dill, chopped
1 Tbsp. Lemon Zest
1/2 Cup Plain Greek yogurt
1 tablespoon fresh lemon juice
1/2 Cup crumbled feta
1/2 Avocado
1 Cup Cherry Tomatoes, chopped
1 Cup Mini Cucumbers, chopped
1/2 cup Kalamata Olives, pitted and chopped
Extra-virgin olive oil
Kosher salt and freshly ground pepper
Directions
Chop and prep the ingredients. In a blender add the parsley, dill, garlic, chilies, and lemon zest. Blend to break up the leaves.
Add the beans, yogurt, avocado, feta, lemon juice, black pepper and salt. Blend well. Use olive oil if liquid is required.
Remove the dip from the blender to a plate with spatula. Use the spatula to create waves in the dip.
Top the dip off with chopped tomatoes, cucumbers, parsley, dill. Add black pepper and red chili flakes (if desired).
Serve with pita bread or pita chips. Enjoy.
