Love homemade yogurt? Think it's too daunting to make? Check out this quick hack- the microwave does all the work!
My family has been making yogurt this way for years. It's perfect for those busy people that love that fresh creamy yogurt but do not want to deal with all the hassle of milk boiling over on the stove. And let's not forget that burnt milk stuck at the bottom of the pot! This hack leaves you with minimal clean up as well.
Homemade Dahi (Yogurt)
Ingredients
This is for a small batch of yogurt, but feel free to double or triple to amount of milk.
1 Cup of Milk
Pinch of sugar
Yogurt (for culture)
Directions
In a microwave safe pitcher, pour milk. Heat on high for several minutes (1 cup approximately 3 minutes).
You will see the milk bubbling in the microwave. Let it cook, but make sure it is still pretty warm. (Each microwave is different, make sure the milk is boiling but not bubbling or spilling out of the pitcher.)
Place sugar at the bottom of container and pour milk.
Add the starter and mix it well. There should be no lumps.
Place in kitchen town and keep in warm undisturbed environment for 6-8 hours.
If you have a drafty kitchen or live in a cold climate, create a steam bath in the InstantPot. Pour 1 cup of water and place stand in pot. Place yogurt container. Close the lid and set to yogurt setting. Leave for 6-7 hours.
After yogurt has set, place in refrigerator overnight to chill. Enjoy with your next meal!
Tips
Whole Milk is best. You get a nicer texture.
Use a yogurt with probiotics (I use Stoneyfield Probiotic Whole Yogurt).
The microwave safe mug should have room so that when the milk bubbles, it does not pour over.
Make sure the milk has boiled. It should bubble in the microwave.
For best results, use steel or glass container.
With the Instant pot method, you can remove at the 6 hour mark and place in the refrigerator.
