Looking for a soup that warms your soul and tingles your tastebuds...Look no further.
This hot and spicy soup will definitely have you feeling warm. It's a great lunch option or starter. For my meat eaters, you can always add meat instead of tofu and switch up the broth. The cilantro stems are a must in this recipe- they add a lot of flavor.
Hot & Sour Soup
Ingredients
1 qt. Vegetable broth
1 pkg. Shiitake Mushrooms sliced (can be any mushroom)
1-2 Carrots julienned
1/2 Bell pepper julienned
1/2 pkg. Tofu Cubed (can be soft or firm)
1 in Ginger grated
3-4 Garlic cloves grated
1-2 Green Chilies diced
2-3 Spring Onions, separate whites and greens
1 handful of Cilantro chopped (chop stems and keep aside)
1 tsp. White Pepper Powder
2 tbsp. Soy Sauce
1 tbsp. White Vinegar
1 tbsp. Sambal (optional)
1 tbsp. Cornstarch (for slurry)
Directions
In pan heat oil on Medium-High heat. Sauté aromatics.
Once fragrant, add mushrooms.
After mushrooms release some water, add carrots and bell peppers. Add splash of water if it looks like ginger and garlic are burning.
Add spring onion whites. Sauté for 30 seconds, then add broth.
Add cilantro stems. Keep flame on medium high.
Add soy sauce and vinegar (and Sambal if desired). Add white pepper and add salt to taste.
Check for spice and salt before adding the slurry.
Make a cornstarch slurry and add. Keep boiling for an additional 5-10 mins.
Add cilantro and spring onion greens. Serve hot. Enjoy!
