Mango Salad

This easy Mango Salad is spicy, sweet and tart. This Indian take on a Papaya Salad is simple and quick to prep.

I have been making this salad for years. It is my go-to summer salad to pair with heavier meals. I have shared this recipe with so many of my friends- it has quickly grown to be everyone's summer staple.


Mango Salad


Ingredients

  • 1 Ripe Mango (cut into small strips)

  • ½ Red Bell Pepper, julienned

  • 1 Medium Carrot , julienned

  • 1 Seedless Cucumber, julienned

  • 1-2 Scallions finely chopped

  • ¼ Cup Roasted Peanuts (Optional)

  • 1-1 ½ Lime juiced

  • 1-2 Thai Green Chili (finely chopped)

  • Handful Cilantro (chopped)

  • Chaat Masala (preferably Chunky Chaat Masala)

  • Salt

Directions

  1. In a large bowl add the sliced mango, bell pepper, carrot, cucumber, scallion, and roasted peanuts, cilantro.

  2. To prepare the dressing, combine lime juice, and chopped green chili, chaat masala and salt to taste.

  3. Combine dressing with sliced ingredients and toss when ready to serve. Garnish with a few sprigs of cilantro and roasted peanuts.
