This dip is basically the elote without the mess. It's a healthier version with all the flavor and none of the mayo!
We have this elote at our favorite Mexican restaurant. We specifically request it off the cob so that it isn't messy. We love the flavor of the grilled corn with the Mexican spices. Generally, the corn is topped off with spiced, mayo and cotija cheese. In an attempt to make it a little healthier, I used Greek Yogurt instead. This healthier version cuts he calories but packs all the flavor. I hope you enjoy this summer favorite!
Mexican Street Corn Dip
Ingredients
Serves 4-5
6-8 Corn Cobs
1 Tbsp. Melted Butter
3-4 Garlic Cloves, minced
1/2 Red Onion, finely chopped
1/2Red Bell Pepper, finely chopped
1-2 Jalapeños, sliced
1/4- 1/2 Cup Greek Yogurt
1/4 Cup Pepper Jack Cheese
1/4 Cup Cilantro, chopped
1/4 Cup Cotija Cheese
1 Tbsp. Tajin Seasoning
1 Tbsp. Chili Powder
1 Tbsp. Cumin
Salt to Taste
Directions
Preheat you Air fryer or Oven to 400F degrees for 5 minutes. Meanwhile, clean the ears of corn. Make sure all the threads are removed and the ears are thoroughly washed and dried. (If you have a grill, you can also grill the corn instead.)
Brush the ears of Corn with the melted butter. Place in the Air Fryer for 10-15 minutes. Turn the ears of corn once, midway.
Once the corn is cooked, remove from the air fryer or oven and let them cool.
Chop and prep the other ingredients in the interim.
Remove the corn from the cob. The trick is to do this in a large bowl and run your knife as close to the cob as possible. To help stabilize the ear of corn place a bowl upside down at the bottom as a base.
In a heavy bottom pan, heat some oil. Once the oil is hot, add the chopped onion and garlic.
After a minute add the diced bell peppers. Let it cook for a few minutes.
Thereafter add your corn. Mix well.
Add your sliced jalapenos, and seasonings. Combine.
Turn off your burner. Add the pepper jack cheese and mix.
Add the yogurt and check for taste.
Remove your dip into a serving dish. Garnish with cotija cheese and cilantro. You can add some sliced jalapeños and a lime wedge as well. Enjoy!
