Nothing says love like fresh baked muffins! These Mumbai Mawa Muffins will have your loved one asking for more!
The mawa makes these muffins so soft and spongey. The cardamom flavor with the pistachio and rose toppings are a delightful combination.
Mumbai Mawa Muffins
(Yields 10-12 muffins)
Ingredients
1/2 Cup Oil
1/2 Cup Yogurt
1 Cup Powdered Sugar
1.5 Cups All-Purpose Flour
1 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Cup (125 gm) Khoya/Mawa grated ( I used @nanak_foods)
1 Tsp. Cardamom powder
1/4-1/2 Cup Milk
1/4 Cup Pistachio sliced
2 Tbsp. Dried Roses
Directions
Preheat oven to 350 degrees. Prep your muffin tin with cupcake liners.
In a large bowl add the oil and yogurt.
Sift the powdered sugar into the bowl. Whisk ingredients well.
Add sifted flour, baking powder and baking soda. Mix well with spatula using the cut and fold method.
Add the grated mawa and cardamom powder. Mix well.
Add the milk in 2 batches. The batter should be thick but still loose.
Place in cupcake-lined muffin tin. Fill the liners halfway. I like to use the tulip liners so I can fill them more and give that oversized look. If you use overfill the liners, about two-thirds of the way, you will get about ten muffins.
Top with sliced pistachios and dried roses. Tap the toppings into the batter gently with a back of the spoon. Bake for 12-15 minutes. Let cool and enjoy!
