Warm Brussel Sprouts Salad

This salad is a quick easy take on a warm meal. I love the fact that its versatile and a great way to get fiber into your diet.

What I love about this salad is that it comes together pretty easily. The potatoes act like croutons, giving this salad a little extra crunch (and its gluten-free!). If you buy pre-cut Brussel sprouts it's even quicker. I have also made this with many variations, in an effort to include more produce be ore it spoils, i.e. tomatoes, arugula, onions. You can also add some farro, bulgar or quinoa to make it more filling.

Overall, this recipe is vegan, but I like to add Feta or even goat cheese for a creamy touch. For my vegan followers, you can add nutritional yeast to the potatoes and chickpeas before baking them.


Warm Brussel Sprouts Salad


Ingredients


Dressing:

  • ¼ Cup Extra-Virgin Olive Oil

  • 3 Tsp. Red Wine Vinegar

  • 2 Tsp. Dijon Mustard

  • 1/2 Tsp. Italian Herb Seasoning

  • ¼ teaspoon crushed red pepper

  • 1-2 Garlic cloves, crushed

  • 1 Green Chill, finely diced

  • 1 Shallot, finely chopped (Optional)

  • Salt and freshly ground black pepper to taste

Salad:

  • 1 Lb. Brussel Sprouts, trimmed and thinly shaved

  • 1 Large Russet Potato, peeled and cut into 1/2 inch pieces

  • 1 Can Chickpeas or fresh chickpeas

  • 3-4 Tbsp. Oil

  • 3-4 Tbsp. Garlic Powder

  • 1Tbsp. Italian Herb Seasoning

  • Salt and freshly ground black pepper to taste

  • 3-4 Tbsp. Feta Cheese, crumbled (Optional)

Directions

  1. Preheat your over to 450F degrees. You can also air fry the items at 400F degrees.

  2. In a jar or bowl, mix your salad dressing ingredients together.

  3. Trim and shave the Brussel sprouts. Then add oil, garlic powder, salt and black pepper. Mix well. Bake or air fry for 10-15 minutes.

  4. Wash and cut your potatoes into 1/2 inch pieces. Soak in water to help release the starch. This helps them get extra crispy. Make sure they are dry before seasoning them. Season them with oil, salt and garlic powder. Bake or air fry for 15-20 minutes.

  5. Wash and dry the chickpeas. Season them with the oil, Italian seasoning, and garlic. Bake or air fry for 15-20 minutes.

  6. If you have a large air fryer or oven you can have several trays in at the same time.

  7. Once the items are baked you can remove into a large salad bowl.

  8. Shake or mix the dressing well and pour over the salad. At this time you can add your other fix-ins like avocado, tomatoes, peppers. and grains. Add the feta.

  9. Toss well and enjoy.
