This light and refreshing salad comes together with just a few ingredients.
This salad comes together with some simple ingredients. Its light, refreshing and accompanies any cuisine. The fresh herbs pair well with the lemon and shallots. I love this salad on a hot summer day or as an appetizer for an outdoor party.
If you are vegan you can substitute the feta for a vegan version of feta and the honey for agave syrup. You can omit the feta all together, but I do like the saltiness it brings in contrast to the sweet watermelon.

Watermelon Arugula Salad
Serves: 4
Ingredients
Salad:
1 Cup Watermelon, cut into small cubes or scooped with a melon baller
1.5-2 Cups Arugula, roughly chopped
1/2 Cup Feta, crumbled
8-10 Fresh Mint leaves, finely chopped
8-10 Fresh Basil, finely chopped
Dressing:
1/4 Cup Extra Virgin Olive Oil
1/4 Cup Lemon Juice, freshly squeezed
1/2 Shallot, finely diced
1 Tbsp. Honey
1-2 Thai Green Chili Pepper, finely sliced
Salt to Taste
Black Pepper to Taste
Directions
In a bowl or mason jar, combine all the dressing ingredients. Whisk and shake well. Reserve in the refrigerator if you are not using it within an hour.
Roughly chop the arugula, and chiffonade the mint and basil.
Chut the watermelon into small cubes. Alternatively, you can use a melon baller to scoop out the watermelon.
Combine the salad ingredients in a bowl.
Top with the salad dressing and toss the salad gently.
